  • Water 1028g
  • Levain 136g
  • Special Flour 1,500g
  • Instant yeast 4g
  • Salt 31g

Preparation

Step 1

Mix water, levain, flour and yeast on slow speed for 5 min

Stop and add salt mix until combined

Mix on speed 2 for 5 min.

Remove from mixing bowl and put into greased or sprayed container to allow for resting 1 hr

Fold dough and allow to rest another hour

Fold dough and refrigerate until ready for use
