Apricot-Lemon Cheese filled Bundt Cake

  • Filling:
  • 1 pkg. yellow cake
  • 3/4 Apricot nectar
  • 1/4 c. margarine, softened
  • 3 eggs
  • 2 - 8 oz. pkg. cream cheese,softened
  • 1/2 c. sugaar
  • 2 T. lemon juice
  • 1 c. flaked coconut
  • Glaze:
  • 2 c. powdered sugar
  • 2 T. lemon juice
  • 2 T. apricot nector



Step 1

Preheat oven 350F. Grease and flour 10" bundt or tube pan. In large bowl, combine first 4 ingredients; beat as directed on pkg. Spoon into prepared pan. In small bowl, combine all filling ingredients; beat until smooth. Spoon filling over batter, being careful not to let it touch the sides of pan.

Bake 50 - 55 minutes or until top spring back when touched lightly in center. Cool upright in pan for 1 hour; remove from pan. Cool. Combine all galze ingredients until smooth; drizzle over cake.
