Blueberry-Lemon Jam

Ingredients

  • 8 C fresh blueberries
  • 2 Tbl lemond rind
  • 2 Tbl lemon juice
  • 1 tsp lemon extract
  • 3 C sugar
  • 1 C honey

Preparation

Step 1

Wash and drain blueberries. Put into large pot and add remaining ingredients. Stir well to dissolve the sugar and bring to a boil. Let jam boil slowly, stirring occasionally so it doesn't stick, for 20-30 minutes until thick, or until thermometer reads 220 degrees.

Skim any foam with metal spoon and let jam sit for about 5 minutes. Ladle into hot jars and seal withhot lids.

Process in hot water bath for 10 minutes.
