Chicken Cacciatore

Ingredients

  • 1 lb chicken pieces
  • 3 T flour
  • 2 T olive oil
  • 1 can tomato soup
  • 1/3 c Chianti or other dry red wine
  • 1/2 c sliced onion
  • 1 cup fresh mushrooms, sliced
  • 1/2 t crushed basil
  • 1/2 t oregano
  • 2 large cloves garlic, minced
  • 1 small bay leaf
  • 1 small green pepper, cut into strips

Preparation

Step 1

Dust chicken with flour.
Brown chicken in a skillet with the olive oil.
Add soup, wine, onion, mushrooms, and seasonings.
Cover and cook over low heat 30 minutes.
Add green pepper and cook 15 min more or until done.
Stir occasionally.
Remove bay leaf.
Serve over noodles or rice.
