BBQ pork with sweet potatoes

  • 2 T veg oil
  • 1/2 pounds boneless pork shoulder cut in 1 inch pieces
  • kosher salt and pepper
  • 1 large onion cut into 1/2 inch wedges
  • 2 cloves garlic crushed
  • 3 T chopped chipotle in adobo
  • 1 t chili powder
  • 2 cups chicken broth
  • 1/4 c apple cider vinegar
  • 2 T maple syrup
  • 2 sweet potatoes peeledand cut in 2 inch chunks



Step 1

In a heavy bottom pot heat oil over medium
season the pork with salt and pepper and cook till golden brown on all sides
about 10 mins-transfer to a plate
in same pot add onion and garlic cook till lightly golden 5 min
add the chipotle and chili powder and cook about a minute
add broth, vinegar, maple syrup and reserved pork
bring to boil, reduce heat to med low and cover and simmer 1 1/2 hours and add sweet potatoes about half way through
when pork is done remove to a bowl and shred-bring the potatoes and sauce to
a boil and simmer 5 min-return pork to pot and coat with sauce
serve with soft dinner rolls
