Pan Roasted Salmon with Herb Crust

Ingredients

  • 1 lb salmon filets
  • 1 tsbp Creole mustard (or any spicy style mustard)
  • 1 tsp chopped fresh basil
  • 1 stp chopped fresh dill
  • 1 tsp chopped fresh oregano
  • 1 tsp chopped fresh green onions
  • 2 tbsp olive oil

Preparation

Step 1

1. Preheat the oven to 400°

2. After washing and patting dry the fish filets, coat them with a light layer of the mustard

3. Combine the fresh herbs and sprinkle over the filets

4. Heat olive oil in a skillet over medium heat

5. Cook the outside of the fish, about a minute per side

6. Place the salmon filets in a baking dish

7. Pour ½ C fish stock or water in the pan around the filets

8. Place the baking dish in the over and bake for approximately 20 minutes
