Ingredients
- 1 medium onion cut into chunks
- 1 bunch asparagus cut into 1 inch lenght pieces
- 2 tbsp chicken broth
- 1 tbsp ginger
- 1 large boneless chicken breast cut into 1 inch pieces (or more if you want more chicken)
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- red pepper
Preparation
Step 1
1. Heat 2 tbsp chicken broth in a skillet and stir fry the onion for 2 minutes over medium high heat, stirring occassionally
2. Add ginger, garlic, chicken and continue to stir fry for another 5 minutes, stirring constantly
3. Add asparagus, red pepper, soy sauce, vinegar and red pepper to taste. Stir together and cover.
4. Cook until the chicken is no longer pink and the asparagus is no longer hard
