Curry Puff

A wondefully yummy Indian appetizer.

Ingredients

  • l big onion
  • 6 medium potatoes
  • 1 piece chicken breast meat
  • curry powder
  • 4 fresh chillies
  • 1 cm ginger
  • 2 small onions (optional)
  • 2 garlic cloves
  • 300 g flour
  • 150 g salted butter
  • ice cold water
  • salt & sugar to taste
  • oil for frying

Preparation

Step 1

Filling:

1. Cut onion, potatoes and chicken breast meat into small cubes

2. Blend the chillies, ginger, small onions and garlics into paste

3. Heat wok & add 2 tbsp oil

4. Add onion and fry till fragrant

5. Add in the blend chili paste

6. Mix curry powder with hot water and stir into paste, add into wok and fry till fragrant

7. Add in chicken and stir fry 2 minutes

8. Add in potatoes and stir fry then add in little water

9. Stir and add in 1tbsp salt and 2tbsp sugar to taste

10. Stir and cover wok simmer with low fire 5 minutes

11. Once a while open wok cover and stir a while, cover and continue simmer till chicken & potatoes are fully cooked and water dry up

12. When cooked off the fire and let it cool

Dough:

1. Cut butter into small cubes

2. Mix with flour

3. Slowly add in ice cold water little by little and knead into smooth dough

4. When done, cover dough with damp cloth and keep in cool dark place for 15 min

5. Roll the dough into long shape and cut into small parts about 1cm thick (depending how big you want it)

6. Roll small dough parts with both hands into small balls

7. Flatten it with roller on clean surface and make into circle

8. Use small spoon to scoop filling onto centre of the circle and make into puff shape

9. Make sure filling is completely wrapped inside, make sure no hole or the filling will flow out and it will dirty the oil when frying

10. Heat up some oil in wok and when hot, fry the small puffs till golden brown (the oil should almost cover the puff)

11. Turn the puff to fry the other side until golden brown
