Bakewell Tart

Ingredients

  • 1 puff pastry sheet
  • 1 egg white lightly beaten
  • 1/2 cup berry jam
  • 12 Tbs unsalted butter
  • 3/4 cup sugar
  • 4 large eggs
  • 1/2 cups flour
  • 1/2 tsp salt
  • whipped cream and fresh berries to serve

Preparation

Step 1

Preheat oven to 375 *

Roll out pastry on floured surface to 1/4 inch thick.
Grease 8 " tart pan , line with pastry, prick base with fork.
Chill 15 minutes.
Line with parchment paper and fill with pie weights. Cook 15 minutes until golden.
Remove weights and lightly brush pastry with egg white and cook 5 minutes more.
Spread jam on bottom and cook 20 minutes.
Lower heat to 325* Cream butter and sugar until pale. Beat in eggs one at a time, fold in flour and salt.
Pour mixture in tart. Bake until golden about 40 minutes. Cool completely and serve with berries and cream.
