Ingredients
- 8 cups flour
- 3 cups sugar
- 3 T. baking powder
- 2 t. salt
- 2 t. cinnamon
- 2 t. nutmeg
- 1 egg
- 1 cup milk
- 1/2 cup melted butter
Preparation
Step 1
Combine first 6 ingredients. Store in airtight container in cool dry place or up to 6 months in the freezer.
When you are ready to make muffins, add egg, milk, and butter to 2 3/4 cups muffin mix. Fill muffin cups three-fourths full. Bake @ 400* for 18-21 minutes.
Variations:
Banana: add 2 mashed bananas
Cranberry pecan: add 1 cup chopped fresh or frozen cranberries, 1/2 cup chopped pecans, and 3 T. sugar
Cappuccino: 1 cup mini choc chips, 2 t. instant coffee granules
Blueberry: 1 cup fresh or frozen blueberries
Apricot cherry: 1/2 cup chopped dried apricots, 1/2 cup dried cherries
Carrot raisin: 3/4 cup shredded carrot, 1/3 cup raisins
