- 4 baking potatoes
- salt and freshly ground pepper

Heat oven for 10 minutes at 325 degrees. Spread each of 2 baking sheets with 1 Tbl oil and put in oven for 10 minutes.
Slice potatoes on narrow side, about 1/16-inch thick. Place slices on hot baking sheets, making sure they don't overlap. Sprinkle with salt and pepper.
Bake 10 minutes, rotate pans and bake for 10 more minutes. Flip each chip, then bake for 5-6 minutes more, or until golden brown. Transfer to paper towels to cool.
Repeat with remaining potato slices.
To store chips, cool completely and place in resealable bag. They will stay crisp for several days.
