Indonesian Vegan Bean Salad

A vegan bean and lentil salad with Indonesian-inspired spices.

Ingredients

  • 1/2 c. // 100 g. red lentils, cooked (measurement is for the uncooked lentils)
  • 1 can (~15 oz. // 425 g.) garbanzo beans, rinsed
  • 1/4 t. // 1.25 mL ground cumin
  • 1/4 t. // 1.25 mL ground coriander
  • 1/2 - 1 t. // 2.5 - 5 mL paprika, cayenne and/or chipotle powder
  • 1/8 t. // 0.625 mL ground ginger
  • 1 pinch turmeric powder
  • 1 pinch ground cloves
  • 1 pinch ground black pepper
  • 1 pinch ground cinnamon
  • 1 pinch salt
  • 1 T. // 15 mL shredded coconut
  • 1 clove garlic, minced
  • 1/2 lime, juiced
  • 3 leaves basil leaves, finely diced
