Duchess Potatoes

Ingredients

  • 6 medium potatoes (2 lbs)
  • 1/4 C milk
  • 1/4 C butter, softened
  • 1/2 tsp salt
  • dash pepper
  • 1 egg, beaten
  • 1 Tbl butter, melted

Preparation

Step 1

Peel potatoes and cut into large pieces.

Heat 1-inch salted water (1/2 tsp to 1 cup water) to boiling, add potatoes. Heta to boiling, reduce heat, cover and cook until ltender, 20-25 minutes. Drain.

Shake pan gently over low heat to dry potatoes. mash until no lumps remain. Beat in milk in small amounts. Add 1/4 C butter, salt and pepper. Beat unti llight and fluggy. Add egg and beat until blended. Add mor milk if needed--potatoes should be smooth and fluffy.

Drop mixture by spoonfuls or form rosettes on ungreased cookie sheet. Brush lightly with melted butter.

Heat in 425 degree oven until lightly brown, about 15 minutes.
