Ingredients
- 2 T canola oil
- 1 med onion, chopped
- 1 med red bell pepper, chopped
- 4 garlic cloves, minced
- 1 cup dry lentils
- 1/2 c quick-cooking bulgur
- 2 14.5 oz cans veg broth
- 1.5 cups water
- 1 14 oz can petite diced tomatoes
- 2 T chili powder
- 2 t grd cumin
- 1 t salt

Preparation
Step 1
Heat oil in large sauce pan. Add onion, bell pepper & garlic; cook 7 minutes. Add remaining ingredients except toppings. Simmer 30 min. Serve with yogurt, hot sauce & onion (opt)
