Black Bean and Rice Salad

This salad is easy to make and provides a healthy dose of protein and complex carbohydrates. It can be stored in the refrigerator for several days and is a great meal for a quick lunch.

Ingredients

  • Dressing:
  • 1 (15 oz) can black beans, drained
  • 3 cups cooked brown rice
  • 1/4 cup red onion, chopped finely
  • 1/4 cup chopped celery
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 3 tablespoons chopped cilantro
  • 1/4 cup orange juice
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste

Preparation

Step 1

1. Mix the dressing ingredients together in a glass jar and shake to mix well.

2. Combine the beans, rice, celery and onions in a bowl and add the dressing. Toss to mix well. Refrigerate to blend the flavours.
