Zucchini Sausage Soup

Ingredients

  • 1 lb. zucchini, sliced
  • 1 lb. roma tomatoes, peeled and diced large
  • 1 quart canned crushed Italian tomatoes
  • 2 cloves of garlic, crushed and chopped
  • 2 stalks of celery, sliced
  • 1 medium onion, sliced
  • 1 green pepper, sliced thin
  • 1 1/2 lb. sweet Italian sausage, sliced
  • 1/2 t Italian seasoning
  • 1/2 t basil
  • 1/2 t oregano
  • 1/2 t sugar
  • 1 t salt

Preparation

Step 1

Brown the sausage, celery and onion in a small amount of olive oil. Add the garlic and stir until it becomes fragrant, about 30 seconds.

Add the rest of the ingredients. If the soup needs to be thinned a little, add either water or chicken broth. Cover and simmer 30 minutes.

Adjust the seasonings and serve the next day for full flavor.
