- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 2/3 cup butter
- 1 cup white sugar
- 2 eggs
- 1 cup buttermilk
- 1 teaspoon vanilla extract (can try lime juice}
- 1 cup mango puree
- 1/2 cup chopped pecans
- 1/2 cup coconut (optional)

Preheat oven to 375 degrees F (190 degrees C). Grease a 9 x 5 inch loaf pan.
Cream butter or margarine and sugar till light and fluffy. Add eggs and beat well. Mix together flour and baking soda; blend into creamed mixture. Fold in buttermilk, vanilla (or lime), mango puree, coconut, and chopped nuts. Pour batter into prepared pan.
Bake for 40 to 50 minutes, or until done.
