Chicken Adobo

Ingredients

  • 1 1/2 cups rice vinegar
  • 1 cup coconut milk
  • 1/4 cup soy sauce
  • 12 garlic cloves peeled
  • 3 bay leaves
  • 3 whole Thai Chilies
  • 1 1/2 tsp ground pepper
  • 31/2 lbs whole chicken cut into pieces

Preparation

Step 1

In large non reactive bowl or heavy duty resealable plastic bag, combine all of the marinade ingredients. Add chicken pieces and turn to coat in the marinade. refrigerate for at least 2 hours or overnight.
In large casserole or dutch oven, heat chicken and marinade over high heat. bring to a boil, then reduce heat and simmer, stirring occasionally to make sure chicken in marinade until chicken is cooked through and tender, about 20-25 minutes.
Transfer chicken pieces to large bowl, raise heat to medium high and reduce sauce to consistency of heavy cream about 5 minutes. Return chicken to the sauce and cook until just warmed through. Serve with mushroom and bamboo shoot rice and sauteed mushroom greens or bokchoy.
