Chicken with Artichoke Hearts

Ingredients

  • 3 oz. medium pasta shells
  • 1 oz. pine nuts or almond slivers
  • 2 t. olive oil
  • 4 3-oz skinless chicken breasts
  • 1 c. thinly sliced mushrooms
  • 2 garlic cloves, minced
  • 1 c. chicken broth
  • 1/4 c. balsamic vinegar
  • 1 t. dried oregano
  • 1 c. thawed frozen artichoke hearts

Preparation

Step 1

Brown chicken in skillet with oil. Remove chicken. Saute mushrooms & garlic. Combine broth, vinegar, & oregano & bring to boil & cook 4-5 minutes until liquid is reduced by half. Return chicken & mushrooms & simmer 15 minutes. Add artichokes & simmer 5 more minutes.
Boil pasta while chicken is simmering. Drain & serve chicken over pasta. Sprinkle with nuts.
