FAVA****Fava Bean, Potato, Onion and Celery Puree

Great on its own with greens as a meal or as a side substitute for mashed potatoes (much higher fibre).

Ingredients

  • 3/4 cup dried, split fava beans
  • 1 bay leaf, few sprigs fresh thyme, sprig fresh rosemary
  • 14 ounces peeled and diced Yukon gold potatoes
  • 1/4 - 1/2 cup roughly chopped onions
  • 1 leek, sliced
  • 1 - 2 stalks roughly chopped celery
  • 3 cloves garlic, roughly chopped
  • 2 tbsp. EVOO
  • sea salt and fresh ground pepper

Preparation

Step 1

Soak beans overnight in cold water to cover. Drain and rinse.

Place beans and herb sprigs in slow cooker and cover with water by 3 or 4 inches. Cover and cook on high for two hours, without lifting the lid.

After two hours, add potatoes, onions, garlic, celery and leeks and cook for another hour on high heat, or until it starts to boil and rattle the lid of the cooker.

Reduce heat to low and cook for another 1 1/2 to 2 hours, or until beans are done and potatoes and onions are soft.

Drain, reserving some of the water in case needed to adjust consistency and discard herb stems.

Add 2 Tbsp olive oil and mash mixture with hand-held blender until smooth and creamy. Cover and refrigerate.

TO SERVE:

Place desired amount of puree in a measuring cup or a bowl, cover with a paper towel and reheat slowing in microwave until hot. It comes out nice and smooth and you don't need any oil to reheat it. Further, it doesn't stick to any pans. Meanwhile, saute, roast or steam greens of choice in a bit of olive oil with some hot pepper flakes then mix into hot puree and serve.

Greens of choice - rapini, kale, collard greens, chicory, swiss chard, spinach, etc.

Stir greens into puree for last few minutes, just to heat and incorporate. Alternately, serve the greens on the side or over the purée. Plate purée and finish with a drizzle of BEST olive oil, freshly ground pepper and Malden salt.
