Cottage Vegetable Bake

Ingredients

  • 1 tbsp margarine
  • 1 small onion, chopped
  • 1 (16 ounce) can cut green beans, drained
  • 1 (16 ounce) can sliced carrots, drained
  • 2 cups frozen green peas, thawed
  • 1 (10 3/4 ounce) can creamy mushroom soup
  • 3/4 cup small-curd lowfat cottage cheese
  • 1 cup crushed potato chips

Preparation

Step 1

Melt margarine in large skillet. Add onion and saute until tender. Add beans, carrots, peas, soup and cottage cheese. Stir gently to combine. Turn into a greased 1 1/2 quart casserole. Top with potato chips. Pat down lightly. Bake in a 350 F oven 35 to 40 minutes or until bubbly hot.
