Cinnamon-Topped Oatmeal Muffins

Ingredients

  • Topping:
  • 1 cup sifted flour
  • 1/4 cup sugar
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup (quick, uncooked) Quaker oats
  • 2 tbsp. sugar
  • 2 tsp. flour
  • 1 tsp. cinnamon
  • 1 tsp. melted butter

Preparation

Step 1

Sift together flour, sugar, baking powder and salt. Stir in oats and raisins. Add shortening, egg and milk. Stir only until dry ingredients are moistened. Fill greased muffin cups 2/3 full. Sprinkle with the cinnamon topping made by combining all topping ingredients. Bake in preheated oven (425 degrees) about 15 minutes. (Makes 12 medium sized muffins.)
