Mom's Cucumber and Onion Salad

Ingredients

  • 1 cucumber, peeled and sliced
  • 1 white onion, sliced
  • Red wine vinegar
  • 1 tsp Splenda (or 1 packet)
  • EVOO
  • Salt and pepper

Preparation

Step 1

Place cucumbers and onions in a leak proof container

Using a large 16oz glass, add approximately 1 to 1 1/4 inches of red wine vinegar to the glass. Add the Splenda and mix. Fill the glass with cold water. Add a dash of the olive oil and stir the dressing well.

If serving immediately, sprinkle the cucumbers and onions with salt and pepper; pour the vinegar dressing over the top. Chill in the refrigerator until ready to serve.

If being prepared a day or more in advance, add a small amount of cold water and/or ice to the cucumbers and refrigerate. Place the vinegar dressing in a leak proof container and refrigerate. When ready to serve, prepare as above.
