Teriyaki-Sesame Chicken

Ingredients

  • 1/2 cup orange juice (no sugar added)
  • 2 tbs teriyaki sauce
  • 1/4 tsp fresh minced garlic
  • 1/4 tsp fresh minced ginger
  • 2 lbs chicken breast or thighs, skinned
  • 1/3 cup plus 2 tsp plain dried bread crumbs
  • 1 tbs sesame seeds

Preparation

Step 1

1. In mixing bowl combine juice, teriyaki, garlic and ginger. Add chicken and turn to coat with marinade.
Cover bowl with plastic wrap and refrigerate for 2 hours

2. Preheat oven to 350 degrees. In shallow bowl combine bread crumbs and sesame seeds; remove chicken from marinade and coat skin side down with crumb mixture.

3. Spray 13x9' pan, transfer chicken to dish bone side down and pour reserved marinade into dish. Bake until chicken is cooked through 40-45 minutes. Turn oven to broil and broil chicken until crispy and lightly browned. 3-5 minutes.

4. Transfer to platter and drizzle chicken with pan juices.

Alternate cooking method.

Follow instructions 1 and 2 above, but put chicken on a rack of a roasting pan so fat drips down. Bake in oven 45 minutes until chicken is done.
