Bruschetta

Ingredients

  • 6 Roma Plum Tomatoes, chopped
  • 1/2 cup sundried tomatoes
  • 3 cloves minced garlic
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1/4 cup fresh basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • French Baguette Bread
  • 2 cups shredded mozzarella

Preparation

Step 1

Combine all ingredients, except cheese. Refrigerate overnight or for several hours.

Prior to serving, cut Baguette Bread into slices and place under broiler for a minute or two as bread will get crusty.

Place mixture on Baguette Bread and top with shredded cheese. Broil for 1 to 2 minutes.
