Ingredients
- 15-20 medium red skin potatoes
- 3-4 smashed garlic cloves
- 1 onion, peeled and sliced
- 1/4 C-1/2 C mayonnaise
- 1 T dijon mustard celery seed, salt and pepper
- Olive oil
- Wine vinegar
Preparation
Step 1
In a large pot, bring water, onion and garlic to a boil. Add the potatoes and cook until the potatoes are fork tender. Drain and peel and quarter the potatoes.
Drizzle the potatoes and onions with olive oil, salt, pepper and celery seed. Be very generous! Whisk the mustard and mayonnaise together and add the vinegar until it comes to an easy pouring consistency. Add to the potatoes and stir. Season accordingly. Better if served the next day.
