Fruit Salad

Ingredients

  • Dressing:
  • 1 can chunk pineapple, drained
  • 1 can mandarin oranges, drained
  • 3-4 apples, diced
  • 2-3 bananas, diced
  • 3/4 cup pineapple juice
  • 1/2 cup sugar
  • 1/3 cup orange juice
  • 2 Tbsp cornstarch
  • 1 Tbsp lemon juice

Preparation

Step 1

Bring dressing ingredients to boil over medium heat, then cook one minute longer. Set aside while preparing fruit, then pour over gently. Stir to mix. Cover and refrigerate. Keeps several days.
One can add a jar of maraschino cherries cut up in small pieces for color in winter. In summer fresh blueberries, peaches, pears or strawberries can be used.
