Roukeford Sauce fro Filet Mignon (Contessa)

Ingredients

  • 1 1/2 cups heavy cream
  • 2 oz. roukeford pieces
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tbls chopped chives

Preparation

Step 1

Into a pot add heavy cream (reduced)
Add roukeford pieces - let melt into cream.]
Add salt and pepper.
When cheese is melted add chopped chives.
Turn off heat and pour sauce into a gravey boat.
Serve with steaks.
