Eggnog Cherry Nut Loaf

Ingredients

  • 2 1/2 C flour
  • 3/4 C sugar
  • 1 tbsp. baking powder
  • 1 tsp. salt
  • 1 1/4 C dairy eggnog
  • 1/3 C vegetable oil
  • 1 egg, beaten
  • 1/2 C chopped pecans
  • 1/2 C chopped maraschino cherries

Preparation

Step 1

Preheat oven to 350 degrees. Grease 2 (8x4x2 inch) loaf pans. Set aside.

In mixing bowl, combine flour, sugar, baking powder and salt. In a separate bowl, combine eggnog, oil and egg. Stir eggnog mixture into dry ingredients and mix well. Fold in pecans and cherries. Pour batter into prepared pans.

Bake in 350 degree oven for about 45 minutes, or until bread tests done. Cool in pans for 10 minutes; remove loaves from pans and place on a wire rack to continue cooling.
