Pesto Vinaigrette

Ingredients

  • 1-1/2 C lightly packed basil leaves
  • 1/2 C extra virgin olive oil
  • 1/2 C finely grated Parmigiano Reggiano
  • 3 Tbl red or white wine vinegar
  • 2 Tbl fresh lemon juice
  • 2 tsp garlic, finely chopped
  • 1/2 tsp finely grated lemon zest
  • 3/4 tsp kosher salt
  • Freshly ground black pepper

Preparation

Step 1

Put basil, oil, cheese, vinegar, juice, garlic and zest in blender. Blend until smooth. Season with salt and peppr to taste.

Whole or chopped toasted pine nuts make a good garnish for this vinaigrette.
