Strawberry Rhubarb Pie

The most delicious Strawberry Rhubarb Pie I have ever tasted/made. Recipe from the Farm Journal Cook Book.

Ingredients

  • 1 1/4 cups sugar
  • 1/8 tsp. salt
  • 1/3 cup flour
  • 2 cups fresh strawberries, quartered
  • 2 cups fresh rhubarb, cut into 1" pieces
  • 2 Tbsp. butter
  • 1 Tbsp. sugar

Preparation

Step 1

Combine 1 1/4 cups of sugar, salt, and flour. Set aside.

Arrange half of strawberries and rhubarb in pastry-lined 9" pie plate. Sprinkle with half of sugar mixture. Repeat with remaining fruit and sugar mixture; dot with butter.

Adjust top crust and flute edges. Brush top of pie with cold water and sprinkle on 1 Tbsp. sugar. Cut vents in top of pie.

Bake in preheated oven (425 degrees) for 40- 50 minutes or until rhubarb is tender and crust is lightly browned.
