- PIE:
- 1/2 cup unsweetened cocoa powder
- 1/3 cup all-purpose flour
- 1 1/4 cups sugar
- 2 1/2 cups whole milk
- 4 large egg yolks, lightly beaten
- 2 tbsp butter
- 1 tsp vanilla extract
- 1 (9-inch) pie crust, baked
- MERINGUE:
- 5 large egg whites, at room temp
- 1/2 tsp cream of tartar
- 10 tbsp sugar
- 1 tsp vanilla

PIE:
Preheat oven to 325. In a large heavy saucepan, combine cocoa, flour, and sugar. Stir in milk and egg yolks. Cook over medium heat, stirring constantly with a whisk, til mixture comes to a boil. Boil for 3 minutes, stirring constantly. Remove from heat; stir in butter and vanilla. Pour mixture into prepared pie crust.
MERINGUE:
In a metal or glass bowl, beat egg whites at high speed with a mixer til frothy. Add cream of tartar, and beat til soft peaks form. Gradually add sugar, 1 tbsp at a time, beating at high speed for 2 to 4 minutes or til stiff peaks form and sugar dissolves. Add vanilla, beating just til blended.
Spread meringue over hot filling, sealing to edge of pie crust. Bake for 23 minutes. Cool completely on wire rack. Store in fridge.
