Stewed Pakchoi In Ningbou Style

This is a sweet pakchoi served cold. A nice side, appetizer or even snack.

Ingredients
- 8 oz packchoi
- 2 tbsp sugar
- 1/2 tbsp chicken stock
- 1/2 C dark soy sauce
- 2 tbsp black vinegar
Preparation
Step 1
1. Wash pakchoi thoroughly, cut of the stems and then cut into 1/2 or 1/4 pieces
2. Heat up the wok with cooking oil and add the pokchoi. Stir fry the pakchoi for a minute or so and add a bit of water. Scoop out the pakchoi and drip away the oil.
3. Return pakchoi and add sugar, chicken granuales and dark soy sauce. If you want you may add green onions as well.
4. It is very important for all the liquid to completely absorb so let the pakchoi cook for 20 or so minutes until this happens.
5. At the end add the black vinegar and a bit more dark soy sauce.
6. Cool at least overnight in the fridge.
