Ingredients
- 600 g baby potatoes
- Lamb Chops
- 1 T olive oil
- 2 T mango chutney
- 1 T hoisin sauce
- Sauce
- 3 lge shallots, finely chopped
- 1 T butter
- 2 T parsley, chopped
- 1 c red wine
- 2 T tomato paste
- 2 T Worcestershire sauce
Preparation
Step 1
1.Preheat oven to 400. BBQ is also good.
2.Line a baking sheet with foil.
3.Toss potatoes with 1 T olive oil and 1/8 tsp salt.
4.Roast potatoes 10 minutes. Push aside.
5.Place lamb chops on foil. Brush with chutney/hoisin sauce mixture.
6.Cook 20-30 minutes.
7.Let lamb rest a few minutes.
Sauce (optional)
1.Melt butter. Add shallots. Cook until soft, about 2 minutes.
2.Add 2 T tomato paste.
3.Add 2 T Worcestershire sauce.
4.Add 1 cup red wine.
5.Bring to a simmer.
6.Cook 10 minutes.
7.Drizzle over the lamb. Sprinkle with parsley.
