S'mores Chocolate Chip Cookies

Ingredients

  • 1 1/2 c flour
  • 3/4 c graham cracker crumbs
  • 1 tsp baking soda
  • 1 tsp salt
  • cinnamon
  • 1 c butter, room temp
  • 3/4 c brown sugar
  • 3/4 c white sugar
  • 1 tsp vanilla/ seeds
  • 2 eggs, room temp
  • 1 3/4 c chocolate chunks
  • 2 c mini marshmallows
  • 1-2 Hershey Milk chocolate bars

Preparation

Step 1

Preheat oven to 375F
Line a baking sheet with parchment paper
In a medium bowl combine flour, graham cracker crumbs, baking soda, salt, cinnamon, and stir until combined.
Beat together butter, sugars and vanilla in larger bowl until creamy and smooth.
Add eggs beating on medium speed until fully incorporated
Beat in flour mixture to the butter mixture, beating on medium speed until combined well.
Pour in the chocolate chips and stir with a spoon
Covering hands with a bit of flour roll 1-2 tbsp dough into a ball and place on parchment paper
Bake for 4 minutes in preheated oven and remove from heat.
Place as many marshmallows and Hershey chunks into each cookie before returning to oven to bake.
Continue baking for approximately 4 more minutes until marshmallows start to puff out slightly
Cool on baking sheet for 10min until cooling completely on a wire rack. Keep covered in airtight container for up to three days.
