Dill Cucumber Dressing

Ingredients

• 1 cucumber
• 1/2 c chopped shallots
• 1/2 c (lightly packed) fresh dill
• 1/4 c honey mustard
• 2 T white wine vinegar
• 2 T sugar
• 1 clove garlic finely chopped
• 1/4 t kosher salt
• 1/2 c olive oil
• 1/2 c canola oil

Preparation

Step 1

Halve cucumber. Halve lengthwise. Spoon out seeds. Chop cucumber into chunks.
Pile all ingredients except oils into a blender. Pulse ' Swirl smooth. With machine running, slowly pour in oil until vinaigrette is thickened and glossy. Pour into glass jar. Seal and chill
Makes 2 1/2 cups
