Ingredients
- for marinade:
- 3/4 cup buttermilk
- 1 Tbsp. hot pepper sauce
- 1 Tbsp. dijon mustard
- 2 cloves minced garlic
- 1/2 tsp. black pepper
- 2 tsp. salt
- 4 boneless, skinless chicken breasts
- 1 cup bread crumbs
- 1/4 cup parmesan cheese
- 2 Tbsp. flour
- 2 tsp. thyme
- 1/2 tsp. paprika
- 1/2 tsp. cayenne pepper
- oil for frying
Preparation
Step 1
in a large bowl combine marinade ingredients until well blended, add chicken pieces and toss to coat well. place in a shallow dish, cover and let sit 4-24 hours, turning occasionally, a zip lock bag works best.
in a shallow dish combine rest of ingredients. remove chicken from marinade and press each piece in crumb mixture to coat all sides, let sit 20 minutes to allow crumbs to adhere.
heat oil in a skillet, cook chicken until crispy + browned on all sides, and cooked through.
