Raincoat Crisps

Any combination of nuts and seeds work. I cut the loaves in half before putting them in the freezer. Then I can just pull out a half loaf, slice and bake, and it is about enough for 4-6 people for an appie. Great with Boursin

Ingredients

  • Sift together :2 cups flour
  • 2 tsp baking soda
  • 1 tsp salt
  • Add to the above: 2 cups buttermilk
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • Add to the above and stir just until blended
  • 1 cup dried cranberries
  • 1/2 cup chopped pecans
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1/4 cup sesame seeds
  • 1/4 cup flaxseed seeds
  • 1 TBSP chopped fresh rosemary

Preparation

Step 1

Preheat oven to 350 degrees
Spray 2 4X8 inch loaf pans with Pam and pour mixture in pans. Bake about 35-45 minutes until golden and springy to the touch. Remove from pan and cool on racks. The cooler the bread is, the easier it is to cut into thin slices.
Put in freezer for a day then slice as thin as possible. Put the slices in a single layer on an ungreased cookie sheet.
Preheat oven to 300 degrees. Bake about 15 minutes. Flip and bake for another 15 minutes, until crisp and deep golden.
