Ingredients

  • 2 Tbsp. unsalted butter
  • 3 +1/2 cups corn kernels
  • 1/2 tsp. salt
  • 1/8 tsp. ground pepper
  • 1 cup finely chopped yellow onions
  • 1/2 cup finely chopped red bell pepper
  • 1/4 cup finely chopped green onions
  • 1 jalapeno seeded and minced
  • 2 tsp. minced garlic
  • 1 cup mayonnaise
  • 2 cups shredded monterey jack
  • 1/4 tsp. cayenne peppper

Step 1

preheat oven to 350F
melt half the butter in large skillet over medium heat. add the corn, salt, and pepper. cook, stirring occasionally, until the kernels turn deep golden brown about 5 minutes..the corn will make a popping sound as it cooks. then,pour into a bowl.
melt rest of butter in same skillet, add the onions and bell peppers, cook stirring often, until the onions are wilted, about 2 minutes. add the green onions, jalapeno, and garlic and cook another 2 minutes, until everything is softened. pour into corn mixture.
add the mayonnaise, half the cheese and cayenne to the mixture, mix well. pour into an 8 inch baking dish spread rest of the cheese on top. bake until bubbly and golden brown, 10 minutes
