This is my mom's recipe for this great salad.

Ingredients

  • 1 cup sugar
  • 2 heaping tablespoons flour
  • 1/2 teaspoon salt
  • Stir in 1-3/4 pineapple juice and 2 beaten eggs
  • Cook over medium heat until thick.
  • Add 1 tablespoon lemon juice. Let cool.
  • Cook 8 oz. or 1 cup of R.F. Aorin Pepin in 1-1/2 quarts of water with 1 teaspoon oil and 1 teaspoon salt added to this.
  • Cook until well done. Drain and let cool in cold water.

Preparation

Step 1

1 - 8 ounces and 1.4 ounces Cool Whip

2- 15 ounces can pineapple chunks

2 cans mandarin oranges

1 - 15 ounce can crushed pineapple

Drain the fruit real good and use juice.

For filling options, consider adding:

1 cup coconut and 1 cup marshmallows.

Mix Cool Whip into pineapple filling and add to the other ingredients.

Chill in refrigerator.
