Cinnamon Buns

Ingredients
- DOUGH
- 3 packets dry yeast (11/4 tsp per packet)
- 2 cups warm water
- 1 Tsp plus 1 cup sugar
- 8 oz margarine
- 4 eggs
- 1/4 cup vanilla sugar
- 1 tsp salt
- 9 cups all purpose flour
- FILLING
- 3 cups dark brown sugar
- 6 TBSP cinnamon
- 1 1/2 cups melted margarine
- WHITE GLAZE
- 1 cup confectioner's sugar
- 1 TBSP hot water
- CHOCOLATE GLAZE
- 1 cup confectioner's sugar
- 2 TBSP cocoa powder dissolved in 2 TBSP of hot water
- 2 TBSP of hot water
- CARAMEL GLAZE
- 1 cup confectioner's sugar
- 1/4 cup dark brown sugar
- 1 TBSP plus 1 tsp hot water

Preparation
Step 1
DOUGH
- combine yeast with water and 1 tsp of the sugar let stand until bubbles form about 10 min
- in large bowl of an electric mixer, combine 1 cup of sugar, the melted margarine, eggs, vanilla sugar salt and flour.
- Add the yeast mixture and beat until the dough separates from the sides of the bowl and forms a ball. The dough should be slightly sticky but not wet.
- Cover the bowl with plastic wrap and allow to rise at room temp for 2 hours
- divide the dough into 3 balls
- roll out each ball into a large thin 18 x 25 inch rectangle
FILLING
- in a small bowl combine brown sugar and cinnamon
- spread the melted margarine over the dough then sprinkle it with the cinnamon mixture
- roll the dough lengthwise
- cut into 1 1/4 inch slices
- place slices on parchment paper lined cookie sheet with space in between
- cover and allow to rise for 30 minutes
- preheat oven to 350
- bake about 20 min till tops begin to brown. Do NOT overbake as it will become too dry
- wisk the glazes and drizzle over buns when still warm
