Hummus

A very popular, easy to make, delicious spread served throughout the Middle East. It can be served as a dip with wedges of pita bread or crudites, and goes well with broiled or grilled meat or chicken kabobs.

Ingredients
- 2 to 3 cloves garlic, peeled
- 2 cups cooked chick peas
- 1/3 cup tahini (sesame seed paste)
- 1 teaspoon salt
- 3 table spoons extra virgin olive oil
- 1/3 cup lemon juice
- paprika and freshly chopped parsley for garnish
Preparation
Step 1
1. Place steel blade in work bowl of food processor. Turn motor on and drop garlic cloves, one at a time, through feed tube. Stop motor and remove cover. Set aside 9 chick-peas for decoration. Add remaining chick-peas, tahini, and salt. Cover and process a few seconds. Add oil and lemon juice through feed tube with motor running. Process until smooth, scraping down sides of bowl as needed. Adjust seasoning according to taste.
2. Spread on serving platter. Place 3 reserved chick-peas in center of platter and 3 on each side of platter. Sprinkle with paprika and garnish with chopped parsley. Additional olive oil can be poured over hummus when served. Serve with pita bread.
Note: If hummus is too thick, add a few tablespoons of water and blend thoroughly.
Hummus may be refrigerated up to 1 week.
