Ingredients
- 1 lb. rump or sirloin steak, thinly sliced
- 4 tbsp. soy sauce
- 1 tbsp. hoisin saue
- 1/2 inch slice ginger root, peeled and grated
- 1 tbsp. tomato puree or catsup
- 1 tbsp. chili sauce
- 4 tbsp. soy sauce (additional)
- 2 tbsp. cornstarch
- 2 egg whites
- Oil for deep frying
- 6 green onions, sliced into matchstick pieces
Preparation
Step 1
Beat the steak slices until very thin. Mix the ginger and soy sauce in a bowl, add the meat and leave to marinate for 30 minutes, turning occasionally.
2. Lightly beat the egg whites then beat in the cornstarch to make a smooth batter.
3. Heat the oil to 350 degrees. Dip the beef slices into the batter, then deep-fry a few slices at a time until golden brown. Drain on absorbent kitchen paper. Transfer to plate and garnish with the shredded scallions.
4. Serve hot with a selection of dips, such as soy sauce with grated garlic, hoisin sauce and tomato ketchup.
