Deep Fried Beef with Dip

Ingredients

  • 1 lb. rump or sirloin steak, thinly sliced
  • 4 tbsp. soy sauce
  • 1 tbsp. hoisin saue
  • 1/2 inch slice ginger root, peeled and grated
  • 1 tbsp. tomato puree or catsup
  • 1 tbsp. chili sauce
  • 4 tbsp. soy sauce (additional)
  • 2 tbsp. cornstarch
  • 2 egg whites
  • Oil for deep frying
  • 6 green onions, sliced into matchstick pieces

Preparation

Step 1

Beat the steak slices until very thin. Mix the ginger and soy sauce in a bowl, add the meat and leave to marinate for 30 minutes, turning occasionally.
2. Lightly beat the egg whites then beat in the cornstarch to make a smooth batter.
3. Heat the oil to 350 degrees. Dip the beef slices into the batter, then deep-fry a few slices at a time until golden brown. Drain on absorbent kitchen paper. Transfer to plate and garnish with the shredded scallions.
4. Serve hot with a selection of dips, such as soy sauce with grated garlic, hoisin sauce and tomato ketchup.
