Zucchini and Hominy

Ingredients

  • 1/4 cup onion, chopped
  • 3 tbsp butter or margarine
  • 2 tbsp vegeteble oil
  • 3 medium zucchini
  • 2 cups tomatoes, chopped
  • 1 can (20-ounces) hominy, drained
  • 2 tobs line juice
  • 1 tbsp chili powder
  • 1 tsp salt
  • i dash pepper

Preparation

Step 1

Cut the zucchini into 1/2-inch pieces. Cook and stir the onion in the butter and oil in a 10-inch skillet over medium heat until tender. Stir in the remainig ingredients and cook uncovered, stirring occastionally, until the zucchini is tender, about 10 to 15 minutes.
