Chinese Chicken Salad

A perfect Summer dinner, or lunch ... No matter how much you make, it will all be gone!

Ingredients
- 3-4 chicken breast halves, boned & skinned
- 1 head iceburg lettuce, shredded
- 1 bunch green onions (cut the green sections in pieces, julienne the whites)
- 1/2 c. chopped cilantro
- 1 small can mandarin oranges, drained
- 2-4 Tb. sesame seeds, toasted
- 1 pkg. maifun (Chinese rice noodles)
- oil to cook the noodles
- dash powdered ginger
- a good vignarette dressing w/ginger

Cook the chicken breasts in water, with some dashes of ground ginger, until they're cooked; cook and shred...
Heat a large pot of oil to make the maifun. Test the oil by dropping a shred of maifun in it. When it "puffs" up immediately, the oil is hot enough. Break the maifun into fist-sized pieces and drop in the oil. When it puffs, turn it over for a second, then take it out and drain on paper towels. Use about half a package of maifun.
Combine all ingredients in a very large salad bowl and toss with Chinese Chicken Salad dressing (preferably with ginger). You can usually find a good bottled one, or whip one up with white vinegar, rice vinegar, olive oil, salt, sugar and a little ginger.
Serve immediately. If you're preparing this ahead, add the maifun at the last minute.
