Cauliflower Fried Rice-21 Day Fix Approved

  • 1 head of cauliflower
  • 2 Tbsp. Coconut oil
  • 1 lg. Carrot cubed (I cut up about 15 baby carrots)
  • 2 cloves of garlic minced
  • 1 cup frozen broccoli (or peas or whatever you prefer)
  • 2 beaten eggs
  • 3 Tbsp. Low sodium soy sauce
  • 6 scallions minced

Preparation time 10mins
Cooking time 25mins


Step 1

Prep the cauliflower:
-shred using largest side of a greater OR pulse rough cut pieces in a food processor. Pieces should resemble small grains of rice. (This is probably the hardest part)

Heat 1 tbsp. Oil in large skillet (or wok) over medium heat. Add carrots and garlic. Stir fry until fragranthe (5 min,)
Add cauliflower, broccoli, and remaining oil. Stir fry quick to cook the cauliflower to make it soft but not mushy.

Make a well in the middl. Turn down heathe and add eggs. Stir gently until eggs are fully cooked. Stir in soy sauce and onions just before serving.

**You could always add already cooked chicken once it is cooked if you like.
