Ingredients

  • 5 oz (6C) Baby Spinach Washed
  • 3 Slices Bacon
  • 1 T EVOO
  • 1/2 C Red Onion Diced
  • 1/4 t Salt
  • 1/8 t Black Pepper
  • 1/8 t Sugar
  • 1 T Balsamic Vinegar

Preparation

Step 1

Large Skillet over Medium Heat, Fry Bacon, Remove to Paper Towel.

With Bacon Grease add EVOO, Onion, Salt, Pepper & Sugar. Salute until Onion is Soft 3-4 Minutes.

Add Vinegar, Swirl to Mix.

Large Bowl with Spinach, Pour Mixture Over & Toss Gently to Wilt, add Bacon on Top.

Serve Warm.
