Brunswick Stew

Ingredients

  • 1 broiling chicken, cut into serving pieces
  • 3 tsp salt
  • Paprika to taste
  • 1/4 cup butter
  • 2 medium onions, sliced
  • 1 medium green pepper, diced
  • 3 cups water
  • 2 cups canned tomatoes, undrained
  • 2 Tbsp chopped parsley
  • 1/2 tsp Tabasco sauce
  • 1 Tbsp Worcestershire sauce
  • 2 cups whole kernel corn
  • 1 package frozen lima beans, defrosted
  • 3 Tbsp flour

Preparation

Step 1

Brown chicken in butter in a deep kettle. Add the onions and green pepper and cook until onions are transparent. Add the water, tomatoes, parsley, salt, paprika, Tabasco, and Worcestershire and bring to a boil. Cover, reduce heat and simmer until chicken is cooked. Add corn and lima beans.
Remove chicken from the bone. Blend the flour with cold water and gradually stir in.
