SPICY HERB GRILLED SALMON STEAKS

Ingredients

  • 1/2 c basil leaves
  • 1/3 c mint leaves
  • 3 tbs minced seeded jalapeño pepper(can use milder chili like Anaheim)
  • 2 tbs white vinegar
  • 2 1/2 tsp minced peeled fresh ginger
  • 1 tsp sugar
  • 2 tsp fish sauce
  • 2 garlic cloves, shopped
  • 4 (6oz) salmon steaks (1 inch thick)
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • cooking spray
  • 1/4 c finely chopped fresh basil
  • 4 lime wedges

Preparation

Step 1

1) prepare grill

2) combine first 8 ingredients in a blender or food processor and process until smooth. set aside. sprinkle salmon steaks with salt and pepper. place fish on a grill rack coated with cooking spray and grill for 5 minutes on each side or until fish flakes easily when tested with a fork. spoon sauce over fish and garnish with chopped basil and lime wedges.
