Green-Olive Dressing

  • 2/3 cup extra-virgin olive oil
  • 1/4 cup seeded chopped tomato
  • 1/4 cup finely-chopped pitted brine-cured
  • green olives/ such as Sicilian
  • 2 teaspoons grated lemon peel
  • Salt to taste
  • Freshly-ground balck pepper to taste


Servings 1


Step 1

Mix all ingredients in small bowl. Season to taste with salt and pepper. Let stand 2 hours at room temperature to blend flavors. (Can be made 3 days ahead. Cover and chill. Bring to room temperature before using.)

This recipe yields about 1 cup.
