Ingredients
- 2/3 cup extra-virgin olive oil
- 1/4 cup seeded chopped tomato
- 1/4 cup finely-chopped pitted brine-cured
- green olives/ such as Sicilian
- 2 teaspoons grated lemon peel
- Salt to taste
- Freshly-ground balck pepper to taste

Step 1
Mix all ingredients in small bowl. Season to taste with salt and pepper. Let stand 2 hours at room temperature to blend flavors. (Can be made 3 days ahead. Cover and chill. Bring to room temperature before using.)
This recipe yields about 1 cup.
